HX711 is a 24-bit ADC (Analog-Digital Converter) that converts analog input voltages (which can be very, very small, since it gives readings at even 24 bits) into a form of digital communication which can communicate with the microcontroller. Otherwise, the microcontroller would not have been able to read such small voltages.
Furthermore, it has an integrated amplifier with a configurable gain of 32, 64 or 128. There are two channels (input), said amplifications are for channel A, while B can be fixed to the amplification of 32. This integrated circuit is made specifically for the scale (load Cell) and it's frequently used with it.
